Meal Planning

I'm making roast lamb for dinner tonight. There will be leftovers. Any ideas? It's the week before payday so running low on fresh veg but I do have a bag of onions, frozen peas and frozen oriental veg. Other than that, I will be making:

- lasasgne
- chicken stir fry possibly
- macaroni

    Jamie Oliver [British] cook a lot of lamb dishes on his TV show and likely available on-line. Items like Sheppard Pie, Curry, Rice casserole, Cheshire Crumble, Pasties and Ragout all use left over lamb. Lamb and anything with mint jelly/jam and wrapped in a tortilla with saute onion & cucumber is fast & easy.

    Indian Pilaf (from Burros and Levine): Cook 1 cup rice in 2 1/2 cups chicken broth with 1 t. curry powder. Then saute 4 sliced onions till golden; add 1/2 c. white raisins, 4 T. chopped almonds, 1/2 t. cinnamon, 1/2 t. nutmeg. Mix with the rice. Add 2 cups cooked lamb (or chicken) cut into thin strips. (Can be frozen to save for later.) Enjoy--we like this!
