Meal Planning

This week we are having:

- paprika chicken with noodles
- spaghetti in a tomato, garlic and basil sauce
- chicken curry with rice

I'm expecting to have leftover spaghetti. I will make rice pudding once or twice this week for desert.

    Lovely meals planned. If you have left ove cooked spaghetti noodles I suggest Dad's Eggs. Heat leftovers in a fry pan, add two or three beaten eggs and cook until eggs set. Noodles not yet mixed with sauce slide into any soup, just cut lengths with kitchen shears/scissors.

    Have you tried Quinoa or Cous Cous as an alternate side dish to rice or potato or pasta? They cook just by adding boiling water and best of all take on flavor from whatever you add like soy sauce, orange juice, Moroccan spices, Spanish spices, Indian flavors and any left over bits. How did the rice pudding turn out? Have you ever made "Magic' Pie? Look it up on-line for a delicious, no fuss, somewhat healthy dessert.

    Or if you have leftover spaghetti, you can add either cottage cheese or ricotta cheese and make baked spaghetti by baking it..kind of like lasagna.
